Foodie Friday: Rhubarb Crunch

Contrary to most people in my generation...I LOVE RHUBARB! Frankly, when made into rhubarb crunch I've even known a few haters to become at least likers...if not lovers.
Rhubarb Crunch

Mix the following until crumbly...
1 c. flour
3/4 c. uncooked oats
1 c. brown sugar
1/2 c. melted butter
1 tsp. cinnamon
Place half in 9X9 baking dish.
Place 4 c. diced rhubarb on crumbs.

Combine and cook until thick and bubbly...
1 c. sugar
2 T. cornstarch
1 c. water
1 tsp. vanilla
Pour over rhubarb and top with other half of crumbs.

Bake at 350 for 35-40 minutes

To double:  Use 6 c. rhubarb and a 9X13 baking dish.
